A Thanksgiving Recipe

Here's a really easy to prepare, nutritious and D-Lishious! From the American Heart Association Cookbook!


MASHED SWEET POTATOES & FRUIT
(From AHA Quick & Easy Cookbook - pg 132)

2 pounds sweet potatoes
3 medium pears or apples
Water
2- to 3-inch stick cinnamon
1 tablespoon acceptable margarine
1/4 tsp salt
1/8 teaspoon black pepper

Peel sweet potatoes and cut into large chunks.
Peel and core pears and cut into large chunks.
In a medium saucepan, combine sweet potatoes and pears.
Cover with water. Add cinnamon stick. Bring to a boil over high heat.
Reduce heat, cover, and simmer 20 minutes or until tender.
Drain liquid and discard cinnamon stick.

Mash potato mixture with a potato masher or beat with an electric mixer
on low speed.

Add margarine, salt, and pepper and mash or beat until
well combined.

Cook's Tip
When it comes to cooking, all pears are not alike.
The best varieties for cooking are Bartlett and Bosc.

If you use apples in this recipe, choose Golden Delicious,
Granny Smith, Jonathan, Rome Beauty or Winesap.
